Ingredients:
Pastry dough:
150 g flour sift into a big bowl
75 g soft butter rub with fingers into flour until mixture looks like breadcrumbs
1 egg white beat slightly, add and mix
1 tablespoon fine sugar add and mix
1/2 tablespoon cream add and mix to combine all ingredients
Filling:
100 g sugar,
2 tablespoons water and
1 teaspoon lemon juice heat slowly in a heavy saucepan until slightly brown. Spread this syrup into the well-oiled baking dish.
Approx 8 apples cut into thin slices and arrange them in the syrup
Method:
* Thoroughly grease the base of a round pie dish measuring 22-24 cm in diameter. Press the dough into a ball, cover bowl with a damp cloth and refrigerate for about one hour.
* Filling: Preheat the oven!
* Roll dough on a flour-dusted surface into a round shape, large enough to cover the filling, place over the apples, tucking in the edge between the pie dish and the filling. Bake for 30 minutes in medium hot oven or until top is slightly brown. Cool the tart for 10 minutes then place a plate over it and carefully turn upside down. Remove the pie dish gently. The crust should now be underneath the apple filling.
* Serve with cream.
