Ingredients:
Pound Batter Dough:
200 g salted soft butter mix in a large bowl until creamy
200 g fine sugar add and mix
Grated rind of 2 limes or
1/2 teaspoon vanilla essence add
4 eggs add one at a time and mix
1 tablespoon milk add and mix all until thick and creamy
200 g flour and
1 teaspoon baking powder sift into mixture and stir thoroughly.
Spoon dough into the baking tin.
Method:
Line a loaf tin, measuring 28 cm, or the base of a spring form, about 23 cm in diameter, with aluminum foil, slightly grease the lining and dust with flour. Keep ready! Preheat the oven! Bake in medium hot oven for approx 50-60 minutes or until fully cooked, when tested with a skewer. Cool for 10 minutes before removing from the baking tin.
