Ingredients:
250 g green beans
250 g cucumber
250 g tomatoes
2 tbsp vinegar
1 medium onion, diced
Large pinch of paprika
Pinch of garlic
4 tbsp oil
Few sprigs parsley for garnish
Salt, pepper
Method:
* Trim the beans and cook them in boiling, salted water until tender. Drain and cool. Slice the cucumbers and tomatoes. Mix remaining ingredients together for dressing.
* Layer cucumber and tomato slices in a glass serving dish or in 4 individual dishes and top with the beans. Pour dressing over salad and leave to marinate for 30 minutes.
* Garnish with parsley.
