Ingredients:
250 g roast beef, cooked
2 red or green peppers
2 tomatoes
1 medium onion
1 clove garlic
3 tbsp oil
2 tbsp vinegar
few sprigs parsley
3 lettuce leaves
Salt and pepper
Method:
* Roughly dice beef, red peppers, tomatoes and onion and mix all together in a bowl. Crush garlic with a little salt, add oil, vinegar and pepper and mix well.
* Pour over salad and leave to marinate for 30 minutes. Sprinkle with chopped parsley. Arrange salad on a serving dish lined with lettuce leaves.
* Serve with white or brown bread and butter.
