Ingredients:
Orange flavored jelly powder 1 pkt
Carrots 4 grated
Mint ½ bunch, finely chopped
Walnuts 1 cup, shelled and finely hopped
Lemons 2
Sugar 2 tbsp
Water as required
Method:
Make the jelly according to packet instructions and let it set in refrigerator. Mix lemon juice with the remaining ingredients and add to the jelly before it sets completely. When ready to serve remove jelly from mold by dipping it in hot water and tipping it over in a serving dish. Decorate with lettuce leaves and mint.
