Lemon Sherbet

Ingredients:

1/2 kg lemons
1/2 kg sugar
1/2 litre water
1 tsp vinegar

Method:

*Wash and cut lemons into two pieces.
*Squeeze juice from the lemons and store it.
*Boil sugar and water to make syrup.
*Cool the syrup and mix lemon juice and vinegar in it.
*Store the mixture in a bottle. When serving mix three fourths glass of water with one fourth glass of syrup and add ice cubes.

Falsa Sherbet

Ingredients:

1 cup falsa
1/4 cup sugar
A pinch of black salt
Ice cubes, as required

Method:

*Wash falsas and soak in water for half an hour to soften the fruit.
*Discard the seeds and blend with all the ingredients. Serve with ice cubes.

Jaggery Sherbet

Ingredients:

A medium piece of jaggery
1 glass of water
1/2 tsp lemon juice
Ice cubes, as required

Method:

*Soak the jaggery in water.
*When it is dissolved, sieve and mix in lemon juice and ice cubes, and serve.

Namkeen (Salty) Lassi

Ingredients:

2 cups plain yogurt
3 3/4 cups cold water
1 teaspoon salt
1 tablespoon mint leaves, shredded
1 tablespoon white cumin seeds, roasted and ground
Crushed ice, to serve

Method:

* Place the yogurt and water in an appropriate sized bowl and add the salt, mint and half of the ground cumin
* Whisk thoroughly until the top of the mixture is quite frothy; alternatively, use a blender
* Then chill the mixture
* Take 6 long glasses and drop in a generous quantity of crushed ice
* Then pour in the frothy mixture
* Sprinkle the remaining cumin on each serving
* You can also sprinkle, your choice of fruits (cut in very small pieces)

Strawberry Drink

Ingredients:

3/4 cup sugar
3 cups strawberries
4 tbsp lime juice

Method:

*Blend all the ingredients until smooth.
*Pour in tall glasses and garnish with lime slices.

Mango Yoghurt Sherbet

Ingredients:

1 medium-sized ripe mango
60 gms sugar
100 ml water
1 gm saffron
2 gms chopped coriander leaves
1 gm black pepper corns
½ cinnamon stick

For Yogurt Sherbet

25 ml sugar syrup
25 ml glucose
250 ml yogurt
125 ml fresh cream
125 ml milk

Method:

*Peel mango and slice very finely. Keep aside.
*Boil water and sugar together till they achieve a syrup-like consistency.
*Add cinnamon and the freshly ground black pepper corn.
*Pour the syrup over the mango slices and keep aside for 30 minutes.
*Sprinkle saffron and coriander leaves and serve with yogurt sherbet.

To prepare yogurt sherbet

*Combine syrup and glucose in a casserole.
*Heat to 85°C and add the remaining ingredients.
*Chill for 12 hours to obtain an ice cream-like consistency.

Mango Rabri

Ingredients:

2 litres milk
200 gms sugar
1 mango, peeled and cut into small pieces

Method:

*Boil the milk and simmer it till it’s reduced to half.
*Add sugar and simmer again for another 10 to 15 minutes.
*Add the mango pieces.
*Cool and then chill for at least 25 minutes before serving.

Strawberry Juice

Ingredients:

1 tsp tukh-malanga
2 cups water
1 cup strawberry juice
Ice cubes, optional

Method:

*Soak tukh-malanga in water for 30 minutes, till it doubles in size.
*Mix strawberry juice and ice cubes.
*Pour in a glass and serve.

Milk with Rainbow Grass

Ingredients:

1 kg milk
1 cup sugar
1 tsp poppy seeds
1/4 tsp jaifal powder
1/2 cup almonds, roughly chopped
1/2 cup pistachios, roughly chopped
A pinch of saffron
1 tsp tukh-malanga, soaked in half cup of water
A pinch of green color
A pinch of red color
5 gms rainbow china grass

Method:

*Boil milk with all the ingredients except tukh-malanga and china grass. Let it cool.
*In the meantime, cook china grass with half a glass of water and four tablespoons sugar. When it dissolves pour the grass in two different bowls.
*In one bowl mix the red color and in another bowl mix green.
*Cool and cut in strips. Mix it in the milk.
*Pour in serving glasses and serve with ice cubes.

Peach & Banana Shake

Ingredients:

2 peaches
1 banana
1/2 liter water
1/4 tbsp lemon juice
1 tsp sugar
Ice cubes, as required

Method:

*Mix all the ingredients and blend in the food processor for three to four minutes
*Add ice cubes and blend again
*Garnish with some left over peach slices or pistachio

Lassi

Ingredients :

1/2 cup Yogurt
2 1/2 cups Iced water
Ice cubes

Method :

1.Put yogurt into a deep jug and beat with a spoon to take any lumps out of it.
2.Add the water, gradually at first, mixing well.
3.Serve with ice cubes in each glass.
4.A more popular drink, especially with children, a sweetened version.
5.For each serving, beat 2 tablespoons yogurt with 2 teaspoons or more of sugar in a tall glass.
6.Gradually add iced soda water.

Cumin and Tamarind Drink

Ingredients :

1/2 cup Dried tamarind pulp
2 cups Hot water
3 teaspoons Finely grated fresh ginger
2 teaspoons Ground cumin
1/2 teaspoon Garam masala
3 teaspoons Sugar or to taste
Pinch chili powder, optional
Salt to taste
Iced water and crushed ice for serving
Mint sprigs, lemon slices to garnish

Method :

1.Soak tamarind pulp in the hot water and leave for 2 hours or overnight.
2.Squeeze to dissolve the pulp and separate the seeds.
3.Strain through nylon sieve.
4.Add remaining ingredients, stir well.
5.Then strain again through very fine sieve or muslin.
6.Chill.
7. Dilute with iced water at serving time.
8.Add ice and garnish.

Fizzy Orange

Ingredients:

2 oz. (50 g) sugar
275 ml fresh orange juice (chilled)
4 tbsp (60 ml) water
1 tbsp (15 ml) lemon juice
275 ml soda or tonic water (chilled)

Preparation:

Heat the sugar and water,stir to dissolve.
Cool and add all other ingredients.
Pour in the glasses and serve.

Chocolate Cold Coffee

Ingredients:

Chocolate(simple)500 grams
Coffee powder 1 tbsp
Milk 1 cup
sugar(as per own taste)
cream and chocolate chips(as per own taste)

Preparation:

Mix chocolate,coffee powder and sugar in milk and leave this mixture for some minutes.After that blend this mixture in blender and than blend it again with ice.Pour in the glasses and garnish it with cream and chocolate chips.

46 oz. can tomato juice
1/4 cup lime juice
3 Tbs. juice from canned jalapenos
3 tbs.white vinegar
2 Tbs. granulated sugar
2tsp. prepared horseradish

1/8 tsp. onion powder
1 dash garlic powder

1/4 cup hot water
1/4 cup cold water

Dissolve cappuccino mix in hot water in tall glass.
Stir in cold water.

Ice Tea (stove)

Ingredients:

4.00 c Boiling water
6.00 Tea bags (normal size)

Preparation:

Place tea bags in heat resistant pitcher.Bring water to a boil, pour water into pitcher over the tea bags. Let steep until desired flavor (anywhere from 15 minutes to 30 minutes) Remove tea bags add sugar or lemon if desired. Stir well. Serve over ice cubes Keep this tea at room temperature to avoid clouding. If tea does become cloudy, restore the clear amber color by adding a little boiling water to the remaining tea.

Ice Tea (sun)

Ingredients:

4.00 Tea bags
1.50 qt Cold water

Preparation:

In a two quart clear glass container, place tea bags. Add 1 1/2 quarts of cold water. Cover. Let stand in full sun 2 to 3 hours or until desired strength. Remove tea bags, serve over ice. Store this tea in refrigerator. NOTE You don’t need the sun to brew Sun Tea. Simply prepare as directed above, except let stand at room temperature several hours or until desired strength.

Ingredients:

1 bag frozen pineapple or 1 can of pineapple chunks or 1cup of fresh pineapple chopped.

2 ripe bananas
23 pinches of nutmeg powder
3 cups milk
2 table spoon sugar
1 tea spoon rose water
1 cup ice cubes

Preparation

Peel off the skin of banana and chop it into small pieces. Mix this chopped banana with sugar and milk. Grind it in mixer and add rose water. Garnish with nutmeg powder. Add ice cubes and keep it for some time. Serve it as a cold drink.

45 litre water

Preparation:

Cut ghajar in slices long or round shape.Mix all ingredients (ground rai) in water in a glass jar. Place it for 34 days keep stirring it every morning and evening. After 34 days it will be ready for use.

Preparation:

Add the peeled almonds,sugar,ilaichi(only the seeds) and half a glass of milk in a blender.blend it till the almonds get blended in the milk.add the rest of the milk and blend again for 23 minutes.add the crushed ice and blend for 5 seconds again.pour in glasses.Delicious and refreshing shake is ready.

Lychee Sherbet

Ingredients:

24 Lychee’s
1 pk Gelatin (unflavored)
1/4 cup Water (cold)
1/3 cup Milk
1/2 cup Sugar
1 cup Half
1 tsp. Lemon juice


Preparation:

Peel and seed lychee’s.Squeeze lychee’s through 2 thickness of cheesecloth to obtain 1 cup juice.Sprinkle gelatin over cold water and let stand 5 minutes. Scald milk, add soaked gelatin, and stir until thoroughly dissolved. Add sugar, mixing well. Cool.
Add milk and half and half.Stir in lychee’s and lemon juice.
Freeze in ice cream freezer.

Pista Lassi

Ingredients:

2 cups fresh yogurt chilled
1 tbsp. sugar
1/2 tsp. cardamom
23 Pistas (Pistachio)
2 drops pista essence
1 tsp. hot milk
1/2 cup crushed ice

Preparation:

Make coarse powder of pista.
Mix sugar in yogurt till well dissolved.
Just before serving combine all ingredients.
Whip well with a hand or electric beater.
The lassi is ready when it is light and frothy.
Serve well chilled.

Rooh Afza ( 2 tablespoons)
Lemon (as desired)

Preparation:

Add sugar to water in the glass and stir it until sugar dissolves.Then add Rooh Afza and lemon and stir it again. Add one or two ice cubes to it and feed your thirst.

- 1 cup milk , chilled
- 21\2 cups vanilla ice cream
- 1 tsp. vanilla essence

Methods:

This drink must be prepared right at the time of serving. Few hours before preparing the drink, put the empty glasses in the freezer. This will give them this frosty look, people would love !
Place the vanilla ice cream and extract into a blender. With the motor running, add the milk, until it is thoroughly mixed.
Get the glasses from the freezer, put them on the serving tray. Pour the shake into the glasses with a straw. Garnish with grated chocolate and maraschino cherries. if desired. Serve immediately.

Tropical Fruit Punch

Ingredients

- 1\2 cup sugar
- 1\4 cup water
- 2 cups fresh grapefruit juice
- 2 cups fresh orange juice
- 2 cups pineapple juice
- 2 cups guava nectar
- 1\4 cup lime juice
- crushed ice
- Mint leaves and lime to garnish

Methods:

1. Cook sugar and water in a small saucepan over low heat until sugar dissolves. Increase the heat and bring to boil. Simmer for 1 minute, remove from heat and keep aside to cool completely.
2. Blend juices, nectars and syrup in a large pitcher. Chill thoroughly.

- 5 1\2 cups water
- 1 1\2 cups sugar
- 3 cups strawberries
- Mint spring for garnish

Methods:

1. Working in batches, Place lime juice, water, sugar and strawberries in blender and blend to a smooth puree.
2. Force the puree through a fine sieve, pressing hard on the solids. Stir and add additional sugar, if desire. Stir to dissolve the sugar.
2. Pour the lemonade into tall glasses, filled with crushed ice. Garnish with mint spring.

Saudi Champaign

Ingredients

- 1 (900 ml) bottled Apple juice
- 1 (900 ml) bottled White grapes juice
- 1 bottle (750ml) any sparkling spring water. I use Perrier.
- One Apple. Half diced
(not pealed) and other half pealed and grated.
- One Orange diced.
- Six Strawberries, chopped.
- Juice from one large Lemon.
- 10-15 Mint leaves washed thoroughly. Very finely chopped.
- Ice cubes enough to keep the punch bowel chilled. Do not put any ice inside the drink.

Methods:

All the juices and water needs to be kept in the Refrigerator till the time required for preparation. Add Lemon juice and chopped mint leaves in a mixing bowl. Use a spoon to whisk it for like 5 minutes. Pour this mixture in the punch bowl. Add diced and grated Apple, Orange and chopped Strawberries. Pour Apple and Grapes juice. Do not open the bottle of the sparkling water till you are ready to serve. Now keep this mixture in the Refrigerator for at least two hours. The best way to serve this drink is to hold the punch bowl with Ice cubes. I do it by putting the punch in a basket that is full of Ice cubes. If this sort of arrangement is not possible for you then keep the drink and the water bottle in your freezer for at least 1 hour. Do not put ice in the drink it will ruin the flavor of the drink. At the time of serving get them out and pour the sparkling water into the already made mixture of juices, stir and serve.

- 2 cups fresh curds chilled
- 1 tbsp. sugar
- 1/2 tsp. cardamom
- 2-3 Pistas (Pistachio)
- 2 drops pista essence

Mango Squash(1)

Ingredients

- 2 kg mango pulp
- 2 kg. sugar
- 1 litre water
- 2 g. potassium meta bicarbonate
- 25 g. citric acid

Methods:

1. Place mango pulp and water in a blender and blend well. Keep aside in a glass bowl.
2. Boil 2 cups of water and sugar in a saucepan. Simmer about 15 minutes or until thick syrup is formed. Put aside to cool.
3. Mix together the mango mixture, sugar syrup, potassium meta bicarbonate and citric acid in a large glass bowl and stir well with a plastic spoon. Store in sterilized glass bottles.
4. To serve, Add some crushed ice to the individual glasses, pour 4-6 tablespoons of the juice and dilute to taste with cold water.

-1 pk Gelatin (unflavored)
-1/4 cup Water (cold)
-1/3 cup Milk
-1/2 cup Sugar
-1 cup Half-and-half
-1 tsp. Lemon juice

1. Peel and seed lychees. Squeeze lychees through 2 thickness of cheesecloth to obtain 1 cup juice.

2. Sprinkle gelatin over cold water and let stand 5 minutes. Scald milk, add soaked gelatin, and stir until thoroughly dissolved. Add sugar, mixing well. Cool.

3. Add milk and half-and-half. Stir in lychee and lemon juice.

- 1 cup fresh lime juice
- 11\2 cup sugar
- 2 tbsp. chopped ginger
- 6 cups sparkling water, chilled
- 6 scopes vanilla ice cream

1. Cook lime juice, sugar and ginger in a medium saucepan over low heat until sugar dissolves. Increase the heat and bring to boil. Simmer for 2 minutes, remove from heat and keep aside to cool completely. Strain syrup into a small bowl.

This drink must be prepared right at the time of serving to give the feeling it deserves. Firstly put the empty glasses in the freezer 15 minutes prior to serving. This will give them this frosty look, people would love !

By the time you want to serve the drink, get the glasses from the freezer, hold them by bottom and put them on the serving tray. Put two table spoons of crushed ice. Fill half of the glass with fresh fruit cocktail. Do the same for all the six glasses. Now open the can of 7up and start pouring the soda in to the glasses. Pour soda in glasses from at least distance of two inches so you get top filled up with bubbles.

-2 cup Blackberries
-2 1/2 cup Water
-Raw sugar — to taste
-1 pn Sea salt — small pinch
-Crushed ice, to serve

Soak the blackberries in the measured water overnight.
Mash the blackberries into the water, then put the

3. Bring to Boil, whisking constantly, simmer for 1 minute. Pour into a bowl, cover and keep aside cool completely. Chill at least 1 hours, until cold.
Assembly:
Place 6 tablespoons chocolate syrup, 4 tablespoon milk and 3 cups ice cream into blender and blend until smooth. Pour into 2 glasses. Repeat with remaining syrup, milk and ice cream.
