Banana Shrimp Cocktail

Ingredients:

3 bananas
3 tbsp peas, frozen
125 g shrimps, parboiled
2 tbsp mayonnaise
3 tbsp condensed milk or light cream
1 tbsp mango chutney
1 tbsp orange juice
4 lettuce leaves
Salt, pepper and a little sugar

Method:
* Slice bananas and cook the peas in boiling water for 8 minutes. When cool, mix peas with bananas and shrimps. Blend mayonnaise with condensed milk or cream, add mango chutney and orange juice and season with salt, pepper and sugar.
* Fold dressing into banana mixture. Line 4 sundae glasses with lettuce leaves and arrange the cocktail on top.
* Serve with toast and butter.

South Indian Chai Tea

Ingredients:

3/4 cup water
1/4 cup milk
1 tea bag
1 cardamon pod, remove shell and grind pieces to powder
honey or sugar, to sweeten according to taste

Directions:

1. Stove top method: Pour water and milk in saucepan, bring to boil. Remove saucepan from heat. Add tea bags and cardamon powder. Cover saucepan. Let tea steep for 5 minutes. Sweeten with honey or sugar.

2. Microwave directions: Pour water and milk into microwave safe 2 cup capacity glass. Add tea bag(s) and cardamon powder. Set time for 2 – 3 minutes and watch carefully until it starts to boil, do not allow to boil over. Turn off microwave and let tea steep for 5 minutes. Sweeten with honey or sugar.
Above ingredients for one serving. – Lipton Black Tea with Orange Pekoe is fine. – Try 2 tea bags for a stronger tea flavor. – Try 2 cardamon pods for a stronger spice flavor. – If you have cardamon powder, use 1/4 tsp.

Kashmiri Chai/gulabi Chai

Ingredients:

6 tsp. green tea leaves
5-20 seeds of green cardamom
12 tsp. ground cardamom
12 tsp. bicarbonate of soda
12 litre. full cream milk e)Fresh cream ( malai)
6 tsp. ground pistachio
6 cups water
salt to taste


Preparation:

1. Pour water in a heavy based large pan. Add tea leaves,salt, seeds of green cardamom and bicarbonate of soda.
2. Bring to boil reduce heat and simmer briskly for 45 minutes or until it reduces to 13 its quantity.
3. While it is still boiling pour in it about 23 cups of cold water or enough water to make four cups in all. Bring to boil and simmer for 45 minutes. Remove from heat, strain and keep aside.
4. Boil the milk with ground cardamom over low heat. Pour prepared tea water (Qahwa) in the milk. Bring to boil, add salt and simmer for 35 minutes over low heat.
Remove from heat and pour into 6 cups.Pour 1 tablespoon of cream or malai. Sprinkle 1 teaspoon of pistachio over it.

Tea Bar

Ingredients:

Mint Tea
3 cups water
1 cup fresh mint, bruised with the back of a spoon

Preparation:
Bring water to a boil.Turn off heat. Add bruised mint and allow to steep.

Instant Cappuccino

Ingredients:

1 cup Instant Coffee Creamer
1 cup Instant Chocolate Drink Mix, Nestle’s
3/4 cup Instant Coffee Crystals
1/2 cup Sugar (adjust to taste)
1/2 teaspoon Ground cinnamon
1/4 teaspoon Ground nutmeg

Preparation:

Combine all of the ingredients and mix well. Use about 3 tablespoons or 4 teaspoons per 6 oz cup of boiling water.

Romantic Chai

Ingredients:

Put 2 ilaichis in water
Put one thin slice of ginger
Let it boil
Add Taj Mahal tea
Add milk (or microwave it separately)

Preparation:

1) When it is raining. Place yourself at place from where you can see shafts of water connecting sky with earth.

2) When you’re snowbound. Light the fire (in fireplace) Once again watch the earth getting dressed in fresh cotton.

Peshawri Kehwa

Ingredients:

dried leaves of kehwa half tsp
ilaichi 23
cinamon(daarcheeni)1 piece
sugar as desired

Preparation:

In 34 cups of water add the ilaichi and cinamon and let it come to a boil.let it boil for a few minutes and then add the dried leaves of kehwa.boil it for another 10 seconds not more,strain and pour into cups.add sugar as desired.

Hot Tea Punch

Ingredients

- 6 cups water
- 3/4 cup sugar
- 2 cinnamon sticks
- 8 whole cloves
- 5 tea bags
- 1 1/2 cups orange juice
- 1/3 cup fresh lemon juice

Methods:

1. Put water, sugar, cinnamon sticks and cloves in a large heavy based sauce pan and bring it to boil, stirring until sugar dissolves. Boil for about 5 minutes.
2. Remove from heat. Add tea bags. Cover with a tight fitting lid and let stand for 10 minutes.
3. Discard the tea bags. Add orange and lemon juices to the punch. Remove the whole spices with a slotted spoon and reheat before serving. (Can be prepared 1 day ahead. Cover and refrigerate. Serve hot.

Hot Chocolate Drink

Ingredients

- 175 g. semisweet chocolate, break into small pieces
- 2 1\2 cup heavy cream
- Pinch cinnamon
- Whipped cream

Methods:

1. Melt chocolate pieces in a double boiler over hot water.
2. Add the cream and stirring constantly bring to boiling point.
3. Add the cinnamon and pour in 4 cups.
4. Top with whipped cream.
