Ingredients:
2 cups yogurt
1 beetroot, boiled and cut into cubes
2 cucumbers cubed
1 capsicum, cubed and seeded
2 tomatoes, chopped
1 cup potatoes, cubed and boiled
3 tbsp roughly chopped peanuts
2 tbsp chopped coriander
2 tbsp cashew seeds, chopped
1 tsp chopped green chillies
2 tbsp freshly grated or flaked coconut
1 tsp sugar
Salt to taste
For baghar:
1 tsp cumin seeds
1/4 tsp crushed red chillies
2 tsp oil
Method:
Beat the yogurt and add all the remaining ingredients.
Prepare the baghar by heating the oil and frying the cumin seeds until they begin to crackle, then add the crushed red chillies and after a few seconds pour over the raita.
